Apple Turnovers

It's been a week! A week I really don't care to repeat. It started last Wednesday when I took Miss K for a terrible cough she had developed. The cough was fine, but apparently she had an ear infection? When I asked her if her ears hurt she just smiled and said no. One never knows!

The next day Ry developed a fever and was pulling her ears, so I took her up to the clinic, but low and behold her ears were fine! I swear, these kids do their best to keep Mom guessing at all times!

Apple Turnover Recipe

On Friday afternoon the girls were playing and we had just told them to clean up the toys in Miss K's room, but of course they didn't listen. Imagine that! Miss K was running down the hall into her room when all of a sudden we heard hysterical crying. After rushing to her we learned that she slipped on a book in her room and took a tumble. We consoled her, brushed it off and went about our business. She kept bringing it up that her arm hurt and I thought it was a minor sprain, wrapped it up in an ACE wrap to stabilize it and pretty much told her to "Suck it up buttercup"!

Grocery List for Apple Turnovers

  • One box puff pastry
  • Apple pie filling
  • Pecans
  • Caramel sauce
  • Sugar
  • Cinnamon
  • Egg
  • Tinfoil or parchment paper

When Monday morning rolled around and the first thing out of her mouth was, "Mommy, my arm really hurts" I decided it was time to pay the doctor a visit. Low and behold, after x-rays, we found out that she had a buckle fracture in her wrist and she's in a brace for three weeks. Whoops. #momfail

Funny thing about this apparently I'm not the only one that's failed like this! I posted a picture of Miss K on my Facebook page and I got several comments about the exact same thing happening with their kids!

How do you defrost puff pastry?

If you're planning ahead, remove the puff pastry from the freezer and tuck it into the refrigerator overnight. OR remove it from the freezer and place it on the kitchen counter for about twenty minutes to unthaw.

I'm hoping that things calm down and are way less eventful around here after this week! The hubs is off to snowplowing training for the next two weeks with his new job so I'm solo parenting it and I'm biting my fingernails already! I'm also planning ways to pawn of my kids on others… just kidding… well a little bit!

How do you make apple turnovers with puff pastry?

I love this because it's just so easy and so good!

  1. Preheat oven to 400 degrees.
  2. Thaw the puff pastry according to package directions
  3. Line your baking sheet with parchment paper.
  4. Mix together the sugar and cinnamon.
  5. Unfold the puff pastry dough. Cut each piece of dough into four squares.
  6. Top each square with apple pie filling. Top with caramel and pecans. Sprinkle with the cinnamon/sugar mixture, reserving 1/3 of mixture for topping.
  7. Fold the pastry diagonally and crimp the edges
  8. Brush the tops and edges of each turnover with egg wash
  9. Sprinkle with remaining sugar/cinnamon.
  10. Bake for 20 minutes or until pastry is puffed and golden brown.

After this week we all deserve a easy and delicious treat and these Easy Apple Turnovers are the perfect answer! I usually make my favorite Apple Cobbler as a apple treat, but I decided to mix it up and try these this time!

You can serve them up for a breakfast treat or if you ask my husband they are the perfect dessert while still warm with some ice cream on top! I'm really not going to disagree with him!

  • 1 c. apple pie filling
  • 1/4 c. chopped pecans

Prevent your screen from going dark

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper or foil.

  • Divide the apple pie filling between the 8 turnovers. Place pie filling in the corner of each square. Top with caramel and pecans. Sprinkle 2/3 of cinnamon and sugar mixture over the pie filling, reserving 1/3 of mixture for topping. Fold the pastry diagonally and crimp the edges with a fork. Brush the tops and edges of each turnover with egg wash, sprinkle with remaining sugar cinnamon mixture.

  • Bake for 18-20 minutes or until pastry is puffed and golden brown.
